Hello Fresh Favourites in 2018

In 2018 one of my new years resolutions was to eat more healthy meals and become more interested and involved in cooking. I feel that I could not of achieved this without the help of Hello Fresh.

Hello Fresh is a company that creates and delivers recipes boxes to clients. The recipe boxes contain ingredients and instructions needed in order to cook meals selected by the client.

I love Hello Fresh mainly because it has helped me live a healthier life. I have chosen not to eat as much dairy due to personal and health reasons and I feel that Hello Fresh has helped me with this. Even though I do not buy the recipe boxes, I use the website to help me with the cooking in addition to informing me on what ingredients to buy.

Here are my favourite meals that I have cooked in 2018:

Roasted Garlicky Lentils and Sweet Potato Wedges – This meal is one of the most healthiest meal that I have ever made and tasted. I adapted the recipe displayed on the Hello Fresh website by not including the feta cheese. I would of never would of thought of combining lemony garlic lentils with sweet potatoes, peppery rocket and fresh pomegranate seeds together but this combination added so much flavour. This is a dish that I would definitely make again!

Oven Baked Salmon with Black Garlic Sauce, Steam-Fried Veggies and Roasted New Potatoes – I love salmon so this dish was one of the first meals that I just had to cook. I did not include unsalted butter in my meal. It was the first time that I had heard of black garlic sauce. I wouldn’t usually include a sauce to pour over salmon and veg but the black garlic sauce with it made it taste so sweet – perfect for a oven-baked salmon. This is definitely a recipe I would cook again.

Pork And Apple Burger with Rosemary Wedges and Pea Shoot Salad – I really wanted a cheat meal this day but decided to go for a healthy version of a cheat meal instead. Everyone loves a burger and I discovered that pork and apple is a classic combination to include in a burger. The rosemary wedges and pea shoot salad tasted very good to!

Fragrant Caribbean Beef with Coconut Rice and Sweetcorn Salsa – This meal was one of the first meals that I had made using the Hello Fresh website. For me it was an adventurous dish that I had thoroughly enjoyed. It was the first time that I had tasted coconut rice and combined it with sweetcorn salsa. I cooked exactly what was said on the Hello Fresh website as it contains no dairy. This meal was filled with flavour. I feel that this meal is suitable on those cold winter nights and it funnily enough did feel like I was in the Caribbean!

Sea Bass with Roasted Sweet Potatoes and Brazilian Salsa – I love sea bass so I just had to cook this for myself. I adapted this recipe by boiling asparagus instead of frying green peppers. This exotic dish is beautifully flavoured and the sea bass goes so well alongside roasted sweet potato and a zesty salsa.
